Porco Preto is Iberian air dried cured ham. The Alentejo breed is a descent of the mediterraneus wild boar from the south. It was not crossed with other breeds. They eat a lot of acorns from the local cork and holm oaks; that's one of the reasons why Porco Preto has such an unmistakable aroma and taste.
